RIVIERA DEL GARDA CLASSICO D.O.C. ROSSO SUPERIORE - RED WINE - With the greatest care we select the smallest bunches and straggly clusters from the oldest vineyards, from 40 to 90 years old. Harvested shortly before the traditional picking season, they are placed in shallow ventilated crates and then left to raisin for a period of between 20 and 30 days in the drying room, known as the ‘Sulèr’ in dialect. Drawing on family traditions, which began to make use of the technique of drying grapes in winemaking from the beginning of the last century, the vineyard has developed a strong full-bodied wine which is at the same time elegant and pleasant. VINO BIANCO - WHITE WINE (white grapes) - A white wine developing out of the combination of two autochthonous grape varieties which had been abandoned for some time, recovered by us in the 1982 and reintroduced to our vineyards. This combination gives rise to an unusual wine. It is fruity but at the same time characterised by mineral notes, with hints recalling the orange blossom and cedars which once grew along the banks of the lake. BLACK EDITION Longer ageing in the cellar. Wood maturation in large oak barrels. Bottling in the third year after harvesting. This is designed to celebrate the new route chosen for this wine, aimed at enhancing the potential of the grape varieties characterising it and further recognising the importance of time as the key factor in fully exploiting its ability to evolve over the years.
